Food spoilage can also be caused by oxygen in the air. This can cause a process of decay called oxidation. When fats and oils in food oxidize, this can turn the food rancid. One of the main causes of the spoilage of food is the development of microbes, bacteria, yeasts, and mold. These pose a major threat to the shelf life and quality of food.
