The aromas of food aroma are highly sensitive to processing and storage conditions. Loss of flavor and off-flavor development are serious challenges for the food industry. Consumers want to eat fresh tasting food, and sellers need food products to stay like that until they’re bought off the shelf. Meanwhile, consumers also don't want any chemicals or other non-biological additives. This is a challenge for the food industry-but one with a solution.

What causes changes in taste and smell?

Various factors play a role in how well food products maintain their taste and aroma over time—time being one of those factors.

Food spoilage can also be caused by oxygen in the air. This can cause a process of decay called oxidation. When fats and oils in food oxidize, this can turn the food rancid. One of the main causes of the spoilage of food is the development of microbes, bacteria, yeasts, and mold. These pose a major threat to the shelf life and quality of food. They influence the color and smell of products, and give them an ‘’off’’ taste.

How MAP helps

Keeping food fresh and tasty for as long as possible without additives is a challenge. Modified Atmosphere Packaging is able to preserve the quality, taste, and smell of fresh produce over a longer period of time, using only natural gasses. This can significantly slow down the process of decay by inhibiting processes of oxidation and the growth of microbes.

MAP creates an environment in which bacteria, yeast, mold, and microorganisms cannot live. Food spoilage is battled by removing the oxygen from the packaging and creating a custom atmosphere, consisting of gasses that help the product maintain its quality. Together with keeping the packed products at the right temperature, this will prevent loss or change of taste and smell.
