What can happen in one weekend
Even the tiniest hole in the outside of the packaging could undo all the efforts from Modified Atmosphere. It takes only a hole the size of half the diameter of a human hair to allow oxygen to enter the package. And how small this might seem, the damage can be huge. It takes just 70 hours for oxygen levels to rise from 0.1% to 10% - which means a long weekend can have far-reaching consequences. In less than three days, the oxygen levels can become high enough to allow bacteria, bugs, and mold to grow - everything Modified Atmosphere should prevent from happening.

The consequences of a small leak can, therefore, be big. It affects the product, disrupts the supply chain and has a negative impact on a food producer or seller’s reputation.
